AquiSense Technologies LLC of Erlanger, KY, USA (which designs and manufactures water, air and surface disinfection systems based on UV-C LEDs) has announced a commercial collaboration with Spain’s Distform S.L. on their mychef product line of professional combi ovens, which combine dry heat and steam.

AquiSense’s PearlAqua Micro – which uses UV-C LED technology and is claimed to be the world’s smallest UV disinfection system – has been integrated into the mychef for disinfection of the steam vapor, providing enhanced protection against pathogens that affect food quality and safety.

Offering accurate controlled climates (including customizable humidity, air flow, and multiple phases), mychef ovens are claimed to be the only ovens providing a completely disinfected vapor, due to the integration of AquiSense’s UV technology.

“This represents the largest-scale deployment of UV-C LED water treatment technology integrated wholly into a commercial product to date,” believes AquiSense’s European sales director Thomas Arnold.

“The PearlAqua Micro was extensively tested during the evaluation stage and we were impressed with the capabilities of this technology, and look forward to working with AquiSense to further enhance food safety,” comments Distform’s R&D director Albert Torne.
